You get a double dose of ginger with these as both the biscuit and the cream are flavoured. The cream actually has a stronger flavour than both of the biscuits which surprised me. Fox's really excel at making crunchy, brittle biscuits and these are no different. I have to agree with Maria, better suited to a cup of strong coffee than tea. The custard creams in this recipe are a bit of a magic ingredient. As they are warmed in the microwave, and mixed with boiling water the custard filling melts slightly to hold the base together. So you would need to replace the custard creams with another cream-filled biscuit to have the same effect. Try to get the size of the dough as equal as possible, you could weigh them. This is so that the biscuits will bake in the oven at the same time. I’m all for a good biscuit (although I don’t dunk), crunchy or not, but let’s not make sweeping generalisations.
