I followed a recipe I've used several times in other Instant Pots: dredging the 3-pound pork shoulder in flour and spices, searing in the Instant Pot and pressure cooking for 45 minutes. The Duo Crisp turned out a near mirror image of the fork-tender pork shoulders I've made before in the same amount of time. The first pressure cooker lid broke, rendering it unusablePress the Start button, and watch the magic happen! The first brand-new Duo Crisp Ultimate Lid that we unboxed flashed a daunting C6 error almost immediately after turning it on for the first time. We tried unplugging and replugging it, but after just a glimmer of simmering hope, the pot turned cold again. Another, albeit smaller issue is that this model is very big and very heavy. I found it quite a slog to move it from its box to my countertop and certainly wouldn’t want to have to store it in a cupboard when not in use. Both its size and weight mean it might not be suitable for people with mobility or strength issues. Solo households or couples might also find this 6.2L model is just a bit too big for their needs – and while this certainly isn’t a fault, it’s definitely something to keep in mind if you’re not serving up big portions on a regular basis. Well feasibly yes if you live on your own in a small apartment, studio or student digs. But the upshot is that, aside from air frying, I haven’t used any multi cooker that is as easy as a set of pots and pans. I also find that pots and pans produce better looking food, but, hey, that’s just me. Nevertheless, there are thousands out there who love pressure cooking for speed and slow cooking for convenience so more power to their elbows, I say. People who are scared of pressure cooking. There are three steam release options and you select the one you want via a button on the control panel at the start of cooking. After that, you can walk away until the display tells you it’s safe to open the lid. It’s so hands off you’ll barely even realize you’ve been pressure cooking.

We feel that the Instant Pot duo crisp with ultimate lid is a great improvement on existing designs. Although it has all of the same functions you’d find on similar multi-cookers, the single-lid design means it saves a lot of space and is much easier to clean. As the lid is hinged, you don’t need to worry about setting it down somewhere heat-resistant during use either. Apart from those unfortunate technical difficulties (the second machine worked just fine), we found it difficult to get familiar with this multicooker. Similar to Instant's Vortex Plus Air Fryers, this machine only comes with one recipe (and it's for banana bread). That means you'll have to resort to the Instant app for guidance on making even simple dishes like yogurt and risotto.

Slow cook – for beautifully tender results from long, slow cooking of cheaper cuts of meat, as well as deep-flavoured stews, curries and casseroles. Compared with other models we’ve tried, the cooking chamber is wider and shallower, which means more surface area to cook on. This was particularly useful for the air fryer function, which we found to be much more efficient than other models we’ve tested. Our go-to recipe – sweet-potato fries – was ready in 15 minutes instead of the usual 20, and they cooked evenly all the way through. It also came in handy for sautéing, as there was more room to spread out the ingredients.
