Lychees, also known as litchis, are native of Asia and have been a prized fruit in China for more than two thousand years. Once the lychee is peeled, a pearly white, sweet and firm flesh is found. Lychees are excellent eaten fresh or sun-dried as "lychee nuts". MONIN Lychee combines a sweet, exotic flavour with a melon-like aroma and a brilliant golden colour. Lychee Martinis cross cultures behind the bar, while a MONIN Lychee marinade provides a flavourful accent to fish or poultry. Whatever sugar you choose, stir it well into the juice and water mixture until it is completely dissolved. Then, bring the mixture to a boil. This will help prevent the sugar from crystallising, ensuring a smooth texture. If you're planning a party, you can make them in larger amounts beforehand. | Image from dapursanthi The purple ones are the most widely cultivated and are known for their intense flavour and aroma. The yellow ones, on the other hand, are slightly sweeter and less tart, giving a more delicate flavour.

Sugar, water, concentrated passion fruit and other fruit juice, colouring agent: E161b, flavouring, emulsifiers: acacia gum, E445. Salad dressings: Use it as a dressing with olive oil, vinegar, and your favourite herbs for a sweet and tangy salad dressing. We love using this in a Sharon fruit salad.

Make sure to buy organic passion fruit juice rather than commercialised ones. | Image from eatplants.444 How long does homemade passion fruit syrup last? Tasting notes: Exotic fruity aroma, sweet and sour taste which will make you feel like eating fresh passion fruit. In our recipe, we will be using fresh passion fruit. This is more tart and pulpy and requires a little more work to prepare. However, it is a natural and healthier option for the sauce. Smoothies: Add a splash of the sweetener to your favourite smoothie recipe for a sweet and tangy twist. You can opt for fresh, frozen, canned or jarred passion fruit. Depending on the forms you choose, there will be some differences in flavour and texture.

Torani and Monin are usually used in bars and cafes as an added sweetener to liquors and other drinks. | Image from kinnygraham As we do use a fair amount of sugar in our recipe it might not be suitable if you're watching your sugar intake. If you're sensitive to sugar, you can have this in moderation or choose a sugar-free alternative. Best passion fruit syrup
