Jicama is a starch-rich vegetable, similar to potatoes and turnips. It has a slightly sweet taste, but is low in sugar, making it a good choice for people with diabetes or those following a low-sugar diet. Jerusalem artichokes cannot boast with the best of reputation since they truly can cause gas and bloat. This is because Jerusalem artichokes are extremely rich in inulin which is a carbohydrate that causes these effects. But it seems every time I find it, if I look closely, I see that the vegetable has a bit of mold on it. I mentioned this to the guy in the produce department, and he says the jicama is a very slow mover. It comes in damp and sits for a time. i was pleasantly surprised by how light and refreshing jicamas taste! i wonder, though, how starchy jicamas are, and if they're bad for low carb diets?

Lightly water the planted jicama seeds. Sprinkle water over the soil after you plant and then when it becomes dry. Do not saturate the seeds with water, even if the soil is dry. Soaking the seed for 24 hours prior to sowing helps with germination. They'll benefit from heat too, so I'll start the seeds in modules in the heated propagator and position it on the sunniest south-facing windowsill.
